Concerning The Shipment of Our Raw Cultured Vegetables:THE CRAFT OF CULTURE
The making of high-quality raw cultured vegetables is an artisan craft that does not lend itself easily to industrialization. Our producers have applied ourselves to mastering this process and are working diligently to produce the best possible product for your health and enjoyment.

 Through the process of lacto-fermentation, lactic acid is produced, which is a natural preservative that inhibits putrefying and harmful bacteria. The lactic acid bacteria enhances digestibility of the vegetables and maintains their vitamin levels. These beneficial organisms produce numerous helpful enzymes and promote the growth of healthy flora throughout the intestine. These vegetables are a living food!

WHAT TO EXPECT
Your vegetables may arrive warm, which is not a problem. It does not decrease the abundant lactic acid bacteria present, and the lactic acid bacteria protect the vegetables. In most all cases, our cultured vegetables will be fine even after being warm five or more full days. This is the beauty of the preservation process.

Some lacto-fermented products get bubbly. This is natural and no cause for concern. It is a secondary fermentation and has no ill effect. It is exactly like the bubbles found in champagne. Bloated bags are an indication of secondary fermentation. If you do find bloating of bags, you can do one of two things: 1). Prick the bag with a pin and seal with tape, or 2). Transfer the contents of the bag to a glass jar (unless you plan to re-freeze them) or container of your choice, and add a covering of plastic wrap to the surface of the vegetables.

STORING YOUR VEGETABLES
To store your vegetables after you have opened them, do suggestion  # 2 above or simply squeeze the oxygen out of the bag and store the bag and its contents in a zip lock bag in the refrigerator. You can expect them to last up to a month in your refrigerator after they are opened, and 6 months unopened. You may freeze or refreeze our products without harm to the vegetables or lactic acid bactera.

We have selected our materials and refined our process with a commitment to delivering the healthiest product possible. There is no risk of nonylphenol (EMC's) leaching from the plastic wrapping into the vegetables. (Our products are tested by the Food Research and Development Center).
